Healthy Soup Series – Creamy Tomato Soup

When it comes to soul-soothing comfort food, few dishes can rival the warmth and richness of a creamy tomato soup. Today, we’re diving into the heart of comfort with a recipe that has captured the essence of homemade goodness – my Creamy Tomato Soup. Crafted with love and a touch of culinary magic, this recipe promises to elevate your soup experience to new heights.

Ingredients:
2 tablespoons of Olive Oil
1 Large Onion (Yellow or White)
4 Garlic Cloves, chopped
2 28 oz. Cans of San Marzano Tomatoes (Yes, it makes a difference)
1 Cup of Chicken Broth
1 tablespoon of Chicken Base
1 teaspoon – 1 tablespoon of Honey (I prefers a tablespoon)
1/4 cup of Cream or Milk (My choice: Fairlife)
8-10 Torn Basil Leaves
1/2 teaspoon Red Pepper Flakes
1/4 teaspoon of Oregano
Salt and Pepper to Taste
1/3 cup of Freshly Grated Parmesan Cheese

Instructions:
1. Sauté the Aromatics:
In a dutch oven, I start by heating the olive oil. Then, I sauté the onion until it turns translucent, releasing a delightful aroma that fills the kitchen, which takes about 8-10 minutes. Next, add the chopped garlic and continue to sauté until it becomes fragrant, enhancing the depth of flavor, for about 2-3 minutes.

2. The Heart of the Soup:
My secret weapon? San Marzano Tomatoes – their rich, sweet flavor sets the foundation for this soup. I add the tomatoes, chicken stock, and a touch of honey to balance the acidity. The mixture is simmered for 12 minutes, allowing the tomatoes to break down and the flavors to meld into a harmonious blend.

3. Creamy Elegance:
To achieve that velvety texture, I introduce heavy cream (for an even healthier version, choose milk), torn basil leaves, red pepper flakes, and a hint of oregano. (I had this leftover from my Oil of Oregano Recipe. The fragrant aroma fills the kitchen as the soup simmers, enriching the flavors even more.

4. Blend to Perfection:
I understand the importance of texture. Carefully and slowly, I transfer the soup to a blender, working with caution as it’s piping hot. Using the pulse setting on low, I  carefully blend until the soup reaches the desired consistency, ensuring a smooth, luxurious finish.

5. Season and Serve:
Back in the pot, I add the final touch – a sprinkle of salt and pepper to enhance the flavors. Ladled into bowls, each serving is crowned with freshly grated Parmesan cheese, adding a delightful salty kick that elevates the dish to gourmet heights.

6. The Perfect Pairing:
This creamy tomato soup finds its ideal companion in the form of grilled cheese sandwiches – a classic pairing that transforms a humble meal into a feast of comfort and nostalgia.

I purchased a trampoline about a month ago. This has become a regular part of my day. I put it in the office as a constant reminder to not sit for too long.😃 I also bought it to strengthen my ankle. Onion and Honey Cough Syrup – Two POWERFUL Ingredients – Ready to use in 24 Hours!

Honey has been used for a variety of ailments since ancient times. The use of honey for sore throats and coughs can be traced back to Ancient Greece and the Vedic Period in India. 

Onions possess natural antibacterial properties and are rich in antioxidants. When combined with honey, which soothes the throat and suppresses coughs, this syrup becomes a potent elixir for respiratory relief. Onions contain anti-inflammatory compounds such as quercetin and kaempferol, which have been shown to reduce inflammation in the airways. By reducing inflammation, onions can help alleviate coughing associated with irritated or swollen airways. Because onions quickly disperse throughout the body, they come in contact with microorganisms like bacteria. Then, they penetrate these organisms and interfere with their functioning. In addition, sulfur compounds can also stimulate white blood cell production. These immune system cells provide our body’s defense and protection.  

Honey is rich in minerals, enzymes, several B vitamins, prebiotics, and antioxidants.
It has strong antibacterial properties and has served humans as food and medicine for millennia.
Honey reduces irritation in the throat and on the skin.
Pollen and propolis are what make honey so medicinal. By the way, propolis is the sticky resin from trees that bees use to protect their hives. And propolis is a powerful antibiotic, antifungal, and antiviral. While bees use it to protect their homes, we eat honey to support our health.

Raw honey should never be heated above 118F if we want to preserve its medicinal quality.

Onions and honey make a powerful home remedy that is ready to use in just 24 hours. 
Honey is antibacterial, anti-inflammatory, and is a powerful antioxidant.

Onion is an antioxidant, that fights inflammation in the body, helps to clear mucus, and contains electrolytes that help to hydrate your body.

You will start with a sterilized mason jar. Then, you will dice an organic onion. I used red onion. All types of onions are good for you, but this dark reddish-purple variety, sometimes called purple onions, has especially high levels of quercetin and other flavonoids. You will layer the onion in the bottom of your jar. You will then add a layer of organic, local honey. You will repeat layers until you have enough to last the season for your family.

You will see that this remedy will begin to work after only 1 hour. It will have worked its magic in just 24 hours. You will strain the onions and keep this magic potion in the refrigerator for the season. You will notice that the consistency is considerably thinner. The honey has mixed with the powerful ingredients in the onion.

Tip: I like to reserve the onions to use as a flavorful and healthy addition to salad dressings. 

Take 1/2-1 teaspoon (2.5 – 5 milliliters) every 1-2 hours. 
Do not give this remedy to infants under one year of age. 

To ensure that you are not allergic to any ingredients in the syrup, put a dot of syrup on your finger and apply a tiny amount to just inside your lip. If after 5 minutes there is no reaction, you can proceed to take the recommended amount.
If you are concerned with the rumors of bochilism add 1 Tablespoon of Apple Cider Vinegar.

I personally have never had a problem.

Even if you’ve had Type II diabetes for years it’s not too late to reverse it.

Diabetes isn’t just about blood sugar levels; it’s a condition that affects the entire body. Embracing a holistic viewpoint means addressing physical, mental, and emotional well-being. Once I was diagnosed, I knew I had to do something else in my daily life. It’s all about deciding to make a lifestyle change. If I can do it you can too! Let’s delve into the holistic methods that contribute to diabetes health:

1. Nutrition as Medicine:

Nature provides a cornucopia of nutrient-rich foods that can help manage diabetes. Whole grains like quinoa and brown rice, leafy greens, colorful vegetables, lean proteins, and healthy fats nourish the body without causing drastic blood sugar spikes. Emphasizing these foods not only supports overall health but also aids in maintaining stable blood sugar levels. I started with this. I ate at least 5 cups of veggies throughout the day. This helped to keep me filled up so I wouldn’t be starving in the evenings causing me to snack on the wrong foods.

2. Herbal Allies:

Herbs have been used for centuries in traditional medicine systems to manage diabetes. Bitter melon, aloe vera, fenugreek, and cinnamon are renowned for their blood sugar-regulating properties. These herbs, often available in supplement form, can complement a balanced diet. I add cinnamon or pumpkin spice to my protein smoothie in the mornings 3-4 days per week.

3. The Power of Physical Activity:

Regular physical activity is a cornerstone of diabetes management. Exercise not only helps in weight management but also improves insulin sensitivity. 5. Adequate Sleep:

This was one of the hardest things for me. But, I finally established a bedtime, although I still feel it’s too early. I stick by it at least 5 days a week. Not only does my body balance during my sleep, I also have more energy during the day which leads to more activity.

Frozen Lemonade: Quench Your Thirst and Boost Your Health

Today, I’m sharing my new favorite drink: Frozen Lemonade! I discovered this over the summer, but I plan to enjoy it the rest of the year too. You will need:

  • 1 Whole Lemon (washed well as we will use the WHOLE LEMON)
  • 3 Dates (pitted)
  • 1 Tablespoon of Honey (I like Raw and Organic)
  • 1 Tablespoon of Olive Oil (Light Tasting)
  • 1 Cup of filtered Water (I use Coconut Water)
  • 1 Cup of Ice
  • 1 Teaspoon of Ginger (Fresh)
  • Dash of Cinnamon ( I use Saigon)

Toss in the whole lemon, the water, the dates, the ginger, the honey and olive oil, and the Dash of Cinnamon. Blend well. Pour over a cup of ice in a beautiful glass for a perfect frosty, yummy treat.

Packed with vitamin C, lemons are known for their immune-boosting properties. They also contain antioxidants and aid digestion, making them a fantastic addition to your daily diet. Using the whole lemon, including the peel, adds dietary fiber, which supports gut health.

2. Dates:
Dates are nature’s candy. They are a great source of energy, loaded with essential nutrients like fiber, potassium, magnesium, and vitamins. Dates provide natural sweetness to the Frozen Lemonade without the need for processed sugars, making it a healthier alternative.

3. Honey:
Raw and organic honey is not just a natural sweetener; it boasts antimicrobial properties and is rich in antioxidants. It can help soothe a sore throat, making it a perfect addition to your Frozen Lemonade, especially during colder months when immune support is crucial.

4. Olive Oil:
